Walnuts and Prunes

You know when you're asked to bring an appetizer or a dish to share to a potluck? And you always bring something that you made a million times and is pretty amazing, or we just stop by the store pick up guac and chips because there was zero time to cook or even breathe. Any ways, my mom always brought something delicious, as well as these prunes stuffed with walnuts and covered in sour cream. You guys, it's so simple, and so wonderful. Just don't have too many...prunes do the body good. 

Super simple: 

  • about a cup of prunes, not soaked 
  • walnuts, enough to stuff into each prune, about a half a cup
  • 1/4 cup of sour cream, I used a coconut yogurt that was really good with these flavors
  • honey to drizzle on top.  My mom didn't use honey, but I do. You gotta taste that batch and see if they are sweet enough without the honey. The ones I bought weren't very sweet. I prefer the bulk section, organic variety. 

Open the prune with your hands and stuff with a walnut piece, I like a big crunch, so I stuff mine pretty tight. Arrange the stuffed prunes on a plate, and cover with sour cream or yogurt. Drizzle with honey if desired. 

You guys! Prunes are super healthy! not only do they aid in constipation relief, they are packed with beta carotene and vitamin K. Beta Carotene helps fight against aging (big plus for us gals). They are a great source of iron (good for hair) and protection against osteoporosis (bone loss). I'm pretty much hooked. Read more on prune benefits, Click here
