Gluten Free Strawberry Short Cake!

My mom used to make this as a sheet cake. Two sponges , and a whipped cream filling with strawberries in between, or she would make a swiss roll out of this - that was her go to. We call that a strawberry short cake. I call it delicious and I make it GF. It just makes me feel good.

I’m gonna jump right in and get the recipe down.

For the sponge cake:

  • 6 eggs

  • 3 Tbs milk

  • 1 1/4 cup sugar

  • 2 sticks (1 cup) butter softened

  • 1 1/4 cups GF flour

  • 1 1/4 cups almond flour

  • 1 tsp baking powder

    Combine the flours and baking powder. In a standing mixer, beat sugar, milk and butter till combined. Add one egg at a time, till combined and beat for about 5 min. I turn off the mixer and fold in the flour mixture.

    Prep two cookie sheets by lining with parchment paper, and if your making a cake, then just pour into two 9” spring pans lined with parchment paper.

    Pour the batter equally into the pans and bake for about 10 min if using the cookie sheets and about 20 min if using the spring pans.

    Let cool, and cut round shapes using a cookie cutter. My boys at the scraps.

For the Cream

  • 1 pint heavy whipping cream

  • 1/4 tsp vanilla extract or almond extract

  • 1 1/5cup powdered sugar. I like less sugar in mine, so I use 1 cup

  • 8 ounce package of cream cheese

  • 1/2 cup strawberry jam

  • splash of your favorite rum, or orange liquor

  • 1/4 cup orange juice, water, or brewed black tea. I use black tea

    Blend the Strawberry jam in a food processor to get all the chunks out. Add the rum, brewed tea and set this aside. this is used to soak the cakes.

    Blend cream cheese and powder sugar with a standing blender, scrape sides and add vanilla or almond extract, and then the heavy whipping cream. Beat till peeks form and your done. Don’t over beat this.

    And not the fun part. Assemble the short cakes, or if your making a big cake - go on and do that.

    I use three cake rounds. Put one cake round on the bottom of a serving dish, then take the jam mixture and cover that cake with it, then a table spoon of cream mixture and layer of fresh strawberries. Repeat on the next three layers. I put some almond on tops of the ones I made, just to give it a crunch. Oh my gosh, these this are delicious! Perfect for a summer dessert.
